It's also the season of eating the decorative gourds, so without further ado, here are my top 12 pumpkin recipes to cook in October! Lots of them are really easy – think one bowl or one pot – so I hope you get a chance to get your pumpkin on :)

I Am... Friday Finds: 9.28.18

It's Fri-YAY! This week has been so gorgeously fall. The air is crisp, it's warm and sunny during the day and chilly at night, and the full moon has been incredible. Last Monday was the Mid-Autumn Festival and Mike and I celebrated by hanging out on our deck, watching the moon, and eating mooncakes. Apparently this year was Mike's first ever mooncake. Wait. I just confirmed that with him and apparently he has eaten mooncake before, but he's just never really liked them!? The one we had this year was okay though, according to him!

I Am... 15 Minute Easy Chicken Chow Mein Recipe

The other day Mike and I were starving. Okay, I guess I was the only one was starving because I'm really the only person in this house who gets hangry. Mike's more like a lion, the kind of dude that can eat a big meal and then is seemingly okay for three days without eating. It's so annoying! I, on the other hand, feel the need to eat constantly. I feel like I went through three bags of cauliflower gnocchi last week alone. Anyway, hangry + zero leftovers in the fridge pretty much means that I think of delivery. I really wanted to order take out but even that seemed like it would be an insurmountable wait. Thankfully we had a bag of noodles in the fridge so I could make my super easy 15 minute chicken chow mein!

I Am... The Best Way to Cook Trader Joe’s Cauliflower Gnocchi: Pan-fried Cacio e Pepe Cauliflower Gnocchi Recipe

Now that it's fall, I'm all about the carbs. I have to work on my winter body, after all ;) Jokes aside, I really do find that the cooler weather makes me want to eat ALL the things, which makes me a much more fluffier person in the fall and winter months, compared to spring and summer. I try to combat this by going on super long walks and dragging my butt to the gym (very very occasionally), but the thing that I find works best for me is being aware of what I'm eating and kind of sort of calorie counting.

I Am... Sweet and Sour Vietnamese Hot Pot Recipe

Now that we're just days away from the first day of fall, it's hot pot season! I'm coming at you with this sweet and sour Vietnamese hot pot situation that is going to warm you right up. Hot pot, if you haven't had it, is hands down, one of the best ways to eat, especially when the weather is cool. Essentially, it's a bunch of ingredients laid out at the table with a simmering pot of soup in the middle. Everything goes in the pot, which is on a portable burner, and is simmered. Everyone pops things in, scoops things out, eats, chats, and has a good time. It's casual, fun, infinitely customizable, and delicious!

I Am... Easy 15 Minute Garlic Shrimp Scampi Chow Fun Noodles Recipe

I have a new pantry staple and it's something that I never thought I would be into, but now is a hard yes: dry wide rice noodles. I always thought that wide rice noodles, or ho fun were best fresh. I mean, there's nothing more comforting to me than the soft and chewy texture of a big bowl of beef chow fun. But, after doing a side by side test of the two, I'm in the dry noodle camp. Which is incredibly convenient because that means you can throw this dish together with things without going shopping, if you have shrimp in the freezer, that is.

I Am... Sky-High Strawberry Muffin Recipe

Mike and I have decided that we're going to go adventuring more! Essentially, we're going to: get out of the house more, enjoy the outdoors, go camping, go on hikes, and milk the moment for all that it's worth. Mike thinks this means that we're going to be climbing mountains and doing fun stuff like caving or maybe hot air ballooning, but I'm thinking more along the lines of mini-golf and early morning walks on the beach. Who knows, maybe it'll be a mix of the two?

I Am... Friday Finds: 8.31.18

OMFG it is the last Friday in August! It's Labor Day Weekend?! Where the heck did the summer go? September always feels like fall to me even though it's technically still summer until way past the middle of the month. I think it's because my birthday is in September and I always wanted to be a fall birthday. So, even though I'm holding on to summer as long as I can, I also cannot wait until the weather starts to cool slightly and we can eat all the cozy foods (noodles! cheese! CARBS!) without being judged. Also, it's pumpkin spice latte season and I'm excited I'm basic like that.
