I Am... Instant Pot Butter Chicken Recipe

Last Thursday we celebrated Diwali, the Festival of Lights, at the Uber office down in Santa Monica. It was our first ever Diwali celebration and it was so nice to see such cultural inclusiveness. Uber is really stepping it up with their initiative to celebrate cultural diversity with their ERGs – employee resource groups. It's so important in a workplace to have not just support but celebration and Uber's Asian Heritage ERG really highlights how much they care about intersectionality within their company. It was so fun to see how Uber is mostly young people from diverse cultural and ethnic heritages who are all supportive and caring of each other.

I Am... Caramelized Cinnamon Toast Recipe

Lately, Mike and I have been starting every day with a slice of toast. It's kind of novel for us because we usually go for a very simple breakfast of: coffee for him and decaf coffee for me. Sometimes we have eggs and for a while, after he had gone out and found some on sale one morning while looking for more coffee, we had bacon everyday – nothing excessive, just a slice each. Suffice it to say, first breakfasts are usually a casual affair. They're the fuel I need to get going until second breakfast or lunch.

I Am... The Best Instant Pot Vegan Pho Recipe

Even though I've had hundreds, maybe even thousands of bowls of pho, I can honestly say that the very first bowl of vegan pho that I ate was made by my own two hands. Well, my own two hands and an Instant Pot. It's no secret that I love pho but for some reason vegan pho has never really been on my radar. I'm kind of sad I didn't discover it earlier because it's really really good!

I Am... What to Cook in November: Thanksgivingspiration

I'm all about turkey, all the time, hence the Thanksgivingspiration. What's Thanksgivingspiration you ask? The inspiration to live the spirit of Thanksgiving all month long. Here are my top turkey picks for the month of November. Don't wait until Thanksgiving to eat turkey. You can eat it all the time! I love making a whole turkey because hello leftovers, but sometimes I just like the flavor of turkey. It's becoming more and more popular as a meat and the best thing about that is that there is more than just whole turkey at the grocery store. You can get legs, or breast, or wings, and I'm really digging ground turkey too. Even if you aren't turkey fans, I'm hoping this list inspires you!

I Am... Totoro Pumpkin Scone Recipe

Happy Halloween! Are you guys celebrating? Mike and I aren't planning on doing anything really, but we might wander around the neighborhood in hopes of seeing some costumes. We can't give out candy because we live in an apartment, but I bought a bag of fun sized treats just in case. To be honest, I love Halloween, but really only a certain type of Halloween. Not the scary one with horror movies and gore and spooky things. Nope, I pretty much like kid halloween: candy and cute costumes and good old fashioned fun.

I Am... Totoro Pancake Tutorial: Easy Totoro Pancake Art

I'm back for another day in Totoro Week with some super easy Totoro pancake art! I've made Totoro pancakes before but never pancake art style. What's pancake art you ask? Well, it's when crazy talented artists make multiple colors of pancake mix and then draw on a pan or griddle. It's INSANE. I've devoted way too much of my life to watching pancake art videos on YouTube. I'm not nearly as talented as those peeps, but a simple Totoro I can do. And so can you!

I Am... Totoro Week: How to Make a Totoro Cream Cheese Bagel

Hai! I'm coming at you with a Totoro cream cheese bagel because it's Totoro Week! Why is Totoro Week starting on a Wednesday you ask? Well, because way back in 2013(!!) I dressed up spam musubi as Totoro and almost died of cuteness. It was the first time I dressed up food as Totoro and I was hooked. It was right around halloween and so the year after that, instead of thinking of a costume for me, I decided to dress up some other food as Totoro and declared the week before halloween Totoro Week. Yup, that is the not-so-interesting birth story of Totoro Week.

I Am... You Need to Bring this Pumpkin Queso to Your Next Fall Get Together

It's Fall! Officially the season of fuzzy sweaters and CHEESE. It's the most wonderful time of the year because you get to eat ALL the cozy foods without people looking at you like you're crazy. If they do, just tell them you're working on your winter body. Winter body is totally a thing. You need a little bit extra to keep the cold out.

I Am... Smoked Salmon and Chive Biscuits

I made these biscuits and Mike didn't want to try them because they were too brown. He also claimed that he doesn't like biscuits. I have to admit, these aren't the prettiest biscuits. They are too brown. And you can't really see the layers. I used a glass to cut them out instead of a cookie cutter and it basically squished everything together. BUT...they taste good! I mean, I know we eat with our eyes first and all that, but these guys legitimately are really, really tasty.

I Am... A Classic Chocolate Chip Cookie with a Cardamom Twist: Cardamom Chocolate Chip Cookies

We've been kind of MIA around here because we just came back from a trip to Japan! We went glamping in Hokkaido and explored the Eastern side of Japan's most Northern island. Since we were there, we also spent a little time in Tokyo, because Tokyo. It was super fun to see all the fall leaves (more on that in a post coming soon) and I really enjoyed all of the seasonal fall food things they had.
